I recently checked out the All-Clad roaster at Bed Bath & Beyond and decided against it. Three design flaws turned me away from it:

1) It's not tri-ply, only stainless steel.
2) It can't be used on an induction range (I don't own an induction range, but I like to plan for the future).
3) It's not flat on the bottom (raised center), so it will be difficult to use to make gravy.

After a little research, I bought the Mauviel M'cook 1830 large roasting pan. It's slightly smaller than the large All-Clad, but it has five-ply construction, can be used on any range and is completely flat on the bottom. It's a beautiful piece of cookware with a lifetime warranty. Plus it's made in France, not China (like the All-Clad).

This was the perfect set. I shopped all over and even Bed, Bath and Beyond and major dept stores. To get this size roasting pan with the forks and all is a great deal. It is fab quality and much nicer than expected. If you are doing two stuffed turkey breast roulades this is the size you need. The others are really too small. If you are going to get one make sure you look at the sizes. It ships fast and I love it. No, I would not use this on the stove top as others on reviews have commented.....this is the roasting pan for holidays!! LOVE IT!!

The Roti models are not made with a three-ply construction with an aluminum core and magnetic stainless exterior. The Roti models are made in China (not America like the rest of the All Clad pots and pans) out of a non-magnetized stainless steel. They're not designed for use on induction or conventional stove tops (a common step in the preparation of gravy).

A curiousity: The All Clad Web site doesn't appear to list the Roti models. I couldn't find it under any category. This model is an orphan.

I've used this pan for four years in the oven, the stovetop, for lasagna as well as roasting poultry, and love it. The rack makes roasting a turkey (or whatever else) easy--it always comes out great with no special attention--not even basting. The forks are essential for easily moving a heavy bird. I wish I'd gotten this set much sooner than I did as it's made holiday meal prep far easier.

The upright handles on the pan make moving it more efficient than flat handles and the straight deep sides are great for a big lasagna or casserole too. I haven't found the coating on the rack prevents particles from sticking entirely, but it does clean up well in the dishwasher.

I've never had any trouble starting gravy in the pan on the stovetop after removing the bird and my pan has not warped as one reviewer mentioned. I generally prefer to remove the liquid from the pan after I've incorporated the flavorful bits with a flat whisk, however, so I can separate out the fat. Then I add my flour slurry and the defatted liquid to a saucepan to finish my gravy. I find this more convenient since my stovetop is usually crowded with other pans.

I love my All-Clad pans and have always been able to count on them to meet my needs so I never considered spending a lot on another brand. I've not been sorry. I love this pan. It added another thing to be thankful for when preparing a big holiday meal.
