I needed a cake pan to make 2" cake balls for a billiards table birthday cake. None of the cake decorating sites had what I needed. I bought this pan after days of research....I am totally happy with it. I use it for making Indian Koftas, little veggies dumplings that are usually deep fried. I only put a dab of oil in each pocket and the koftas cook perfectly into little golden balls! I know the pan is preseasoned but I still use a dab of oil....easy to clean, nothing sticks on it....The handle does get hot also, but this does not really bother me as you don't need to hold the handle to flip the koftas... also it is very heavy, just as a side point. One good tip I got from the internet is to use 2 wooden skewers to 1/4 flip whatever you are making, to get uniform balls, rather than trying to flip them, and it works great.

YOU WILL NOT BE DISAPPOINTED WITH THIS EBELSKIVER PAN. Don't even bother with non cast-iron pans. This is the one you want - trust me, I've tried them all!
This pan is FABULOUS and very well seasoned for being new. If you've ever made ebelskivers, you know that even with a seasoned cast iron pan, you need to add butter every time you pour the batter into the bottom before the batter. It is the nature of cooking whether pancakes or french toast or these! You always oil the pan or spray it before your pancake batter and the same is true with these pastries. The very first time I cooked with it it stuck a teeny bit, the very next batch (and from then on) nothing sticked. I got my technique down and now EBELSKIVERS like up in Solvang are our favorite Saturday morning treat. I top them with powdered sugar and we pick out our :dip: for the week. Last week was raspberry jam. MMMMMMMMM
Make sure you wipe the top of pan off with a paper towel before it gets cold to ease cleaning and to preserve the pan. I would NEVER use soap on these. HAPPPY COOKING!!

You know sometimes reviews help and sometimes they dont. Some people clearly dont follow instructions but use products how they want then the product fails to deliver. This is an awesome pan perfect for those pancakes balls with apples inside and perfect if there is a burglar in the house, man its heavy for its little size. Timing and seasoning are key with this pan, turn things at correct time and season with butter and use brush to spread the butter completely around the hole before adding anything. You get it eventually. Although i gave a 5star i would have gone way to excited if the inserts were a bit bigger, one inch is like making bite-size stuff, but then some pastries rise so i guess its okay. Love it - for both its uses lol. Any changes seen on this over time please, its not damaged its turning into a more seasoned cast iron, give it time, its like fine wine, older the better, so use it up!
